Old parsnip - should I cook it?! :)
Look at this parsnip! She overwintered secretly and I planted flowers in the bed over the spring - including asters that have similar-ish foliage.
I didn’t notice it was a parsnip until it was far too late and google told me it wouldn’t be good to eat. I wanted to let it go to seed, but today I got tired of it blocking all my sunlight and with no flowers in sight.
Look at the root that came out should I attempt to eat it? Probably gonna be woody and weird but I’m so curious haha
