Mulching/weed blocking help

I have a landscaping company coming in to pull out invasive shrubs, rose bushes, liriope, and weeds (lots of porcelain berry and virginia creeper), to prep for planting or other application (in the fall). It’s a pretty large area. When I’ve done small areas I’ve used landscaping bags under the mulch. He typically uses very thick plastic which I don’t want because I’ll have to eventually clear it out and hate plastic in general. He does not use landscaping fabric which is fine because I hate that too. If we do just a thick bed of mulch can I do nothing? I’m okay with a weed here and there but the weeds have taken over due to being mixed with plants I can’t get into. I don’t think cardboard is a great option because there is so much area. Some of the areas we may eventually convert to a walkway with gravel or grass and stepping stones. Some of it will be planted with shrubs. I just don’t want to be dealing with plastic in my yard.

Picture is one area we are doing but there is more. There were too many areas planted when we bought the house and it’s too much for us to maintain. I may end up making this particular area gravel/walkway to the backyard, but just need to clear it out now. It looks terrible.
